These Nutty Oat Bars are the perfect blend of crunchy, chewy, and wholesome goodness! Packed with a delicious mix of hazelnuts, walnuts, cashews, and pistachios, along with sweet raisins and cranberries, these bars are both nutritious and satisfying. With a hint of cinnamon and a touch of brown sugar, they make for a delicious snack or on-the-go breakfast. Easy to make and baked to golden perfection, these bars are sure to become your new favorite treat!

Ingredients 

  • 3/4 cup rolled oats
  • 1/4 cup roughly chopped hazelnuts
  • 1/4 cup roughly chopped walnuts
  • 1/4 cup roughly chopped cashews
  • 1/4 cup whole pistachios
  • 1/4 cup raisins
  • 1/4 cup dried cranberries
  • 2 eggs, lightly beaten
  • 1 tablespoon melted canola margarine salt reduced
  • 1 teaspoon cinnamon
  • 1/3 cup plain wholemeal flour
  • 1 ½ tablespoons brown sugar

Method

1. Preheat oven to 160C. Line a 20cm square baking tin with non-stick baking paper.
2. Place all the ingredients together in a large bowl. Toss well until fully combined and mixture is clumpy.
3. Press into prepared baking tin. Bake for 20 minutes then cover with foil and cook for another 20 minutes until firm and golden.
4. Cool and cut into bars.
