Thyme baked potatoes with feta

Take your roast potatoes to the next level with this light and flavorful side dish. Cubed potatoes are roasted to golden perfection, infused with the fresh aroma of thyme and zesty lemon rind, then finished with a sprinkle of crumbled reduced-fat feta for a tangy, creamy touch.

Ingredients:

  • 4 medium potatoes, cubed
  • olive oil spray
  • 1 teaspoon fresh thyme leaves, chopped
  • ½ teaspoon finely grated lemon rind
  • freshly ground black pepper, to taste
  • 40g Australian reduced-fat feta, crumbled

Method:

  1. Place potatoes onto a lined oven tray and spray with oil. Sprinkle with thyme, lemon rind and pepper. Bake at 200 degrees for 15-20 minutes or until golden and tender.
  2. Place potatoes in a serving bowl and sprinkle with feta. Serve warm.
