Pears with pistachio and pinenuts

This Pears with Pistachio and Pine Nuts recipe involves baking halved pears until tender, then filling the cavities with a flavorful mixture of pistachios, pine nuts, raisins, and mixed spice. The pears are baked again until the nuts are toasted and the pears are fully softened.
Ingredients
- 4 medium green or brown pears, unpeeled (depending on what is available)
- ¼ cup pistachios and pine nuts mixed
- 2 tablespoons raisins
- ¼ teaspoon mixed spice
- 1 tablespoon maple syrup
- 4 tablespoons low fat Greek style yoghurt
Method
1. Preheat oven to 180 degrees C.
2. Halve each pear and remove the core. Place on a baking tray lined with non-stick baking paper and spray with oil spray. Bake for 15-20 minutes.
3. Meanwhile, combine the pistachios, raisins and mixed spice. Add the maple syrup and toss to coat.
4. Remove the pears from the oven and spoon the nut mixture into the cavities. Return to the oven and continue to cook for 10-15 minutes until softened.
5. Serve warm or cooled with 1 tablespoon of Greek yoghurt.
