Corn, Spinach & Sweet Potato Fritters

These easy to make fritters are a perfect lunch recipe or simply add an egg on top and voila, you have a cafe-worthy brunch option without leaving the house.

Ingredients 

  • 400g canned sweetcorn (or three cobs of fresh corn - kernels removed)
  • 150g grated sweet potato
  • 1 cup (250 g) wholemeal plain flour
  • 1 teaspoon baking powder
  • 1 egg
  • ½ teaspoon crushed garlic
  • 1 cup (35g) spinach, finely chopped
  • 25g feta cheese, crumbled
  • 3 tablespoons olive oil

Method: 

  1. In a large bowl, combine flour, baking powder, grated sweet potato, corn, garlic and egg. Stir thoroughly until combined.
  2. Add the chopped spinach and feta and stir through the mix.
  3. Heat a frying pan with a tablespoon of olive oil on medium heat
  4. Shape a heaped tablespoon of the mixture into a pattie and add into the pan. Cook for 3 minutes, turning the patty over to cook for another 2 minutes.

Cook’s notes:
We served the patties with a simple spinach salad and some homemade relish. Natural Greek yoghurt is also delicious with a squeeze of lemon juice or finely chopped mint.
