Corn, Spinach & Sweet Potato Fritters

These easy to make fritters are a perfect lunch recipe or simply add an egg on top and voila, you have a cafe-worthy brunch option without leaving the house.
Ingredients
- 400g canned sweetcorn (or three cobs of fresh corn - kernels removed)
- 150g grated sweet potato
- 1 cup (250 g) wholemeal plain flour
- 1 teaspoon baking powder
- 1 egg
- ½ teaspoon crushed garlic
- 1 cup (35g) spinach, finely chopped
- 25g feta cheese, crumbled
- 3 tablespoons olive oil
Method:
- In a large bowl, combine flour, baking powder, grated sweet potato, corn, garlic and egg. Stir thoroughly until combined.
- Add the chopped spinach and feta and stir through the mix.
- Heat a frying pan with a tablespoon of olive oil on medium heat
- Shape a heaped tablespoon of the mixture into a pattie and add into the pan. Cook for 3 minutes, turning the patty over to cook for another 2 minutes.
Cook’s notes:
We served the patties with a simple spinach salad and some homemade relish. Natural Greek yoghurt is also delicious with a squeeze of lemon juice or finely chopped mint.
