Avocado, egg and spinach sandwich

Start your day or recharge at lunchtime with this simple yet satisfying Avocado, Egg, and Spinach Sandwich. Packed with protein from the egg, creamy avocado goodness, and the fibre-rich benefits of wholegrain bread and fresh baby spinach, this vegetarian meal is as nourishing as it is delicious.

Ingredients

  • 2 slices wholegrain bread
  • ½ cup baby spinach leaves
  • 1 egg, hard boiled and de-shelled
  • 2 tablespoons of avocado
  • 1 tablespoons of low-fat natural or Greek yoghurt
  • ¼ teaspoon of Dijon mustard
  • ½ tablespoon of lemon juice

Method

  1. Put spinach leaves over one slice of bread.
  2. In a small bowl, mash egg and avocado together.
  3. Add yoghurt, mustard and lemon juice and mix well.
  4. Spread over the remaining bread slice and sandwich to the spinach.
