Apricot and Pistachio Chicken Patties

Looking for a simple yet flavourful meal idea that’s perfect for light lunches or dinner? These Pistachio & Apricot Chicken Patties are a delightful twist on traditional chicken recipes, combining the savoury taste of chicken mince with the natural sweetness of dried apricots and the nutty crunch of pistachios.
Ingredients:
- 500g chicken mince
- 3 slices multigrain bread, grated
- 3⁄4 cup (90g) pistachio nuts, chopped
- 1 cup (160g) dried apricots, chopped
Method:
- In a bowl, combine all ingredients and season with cracked pepper.
- Roll into 4 patties and place on a paper lined baking tray.
- Chill for 20 minutes, then into a non-stick grill pan over medium heat, cook the patties for 4 to 5 minutes on each side or until golden and cooked through.
Wellness Tip
These are delicious served in a wholegrain wrap with shaved carrot, beetroot ribbons, apple slices and crisp lettuce.
