Packed with fiber-rich oats, juicy raspberries, and a hint of citrus, this overnight muesli is a deliciously nutritious breakfast. Topped with creamy yogurt and crunchy pistachios, it's the perfect balance of textures and flavors to energize your day. Simple, refreshing, and made the night before—wake up to a bowl of goodness!

Ingredients 

  • 1 1/2 cups rolled oats
  • 2 tablespoons pepitas (pumpkin seeds)
  • 250ml reduced fat Australian milk
  • 1 apple, grated
  • 1/4 cup freshly squeezed orange juice
  • 1/2 teaspoon finely grated orange rind
  • 200g fresh or frozen raspberries
  • 200g Australian low fat natural yogurt
  • 2 tablespoons pistachios, chopped

Method

1. Combine oats, pepitas, milk, apple and orange juice in a bowl. Cover and refrigerate overnight.
2. Stir orange rind through muesli and divide between serving bowls. Top with fresh raspberries, a dollop of yogurt and a sprinkling of pistachios.

Tips / Handy Hints

Use strawberries or other seasonal fruits in place of raspberries if desired.
