Summer Blueberry, Avocado & Rocket Salad

This Summer Blueberry, Avocado & Rocket Salad combines fresh rocket, creamy avocado, crunchy almonds, juicy blueberries, mint, cucumber, and reduced-fat feta. Tossed with a tangy dressing made of olive oil, lime, and a touch of syrup, it's a vibrant, refreshing salad perfect for a light meal or side dish.
Ingredients
For the salad:
- 5 cups rocket
- 1 avocado
- ¼ cup almonds
- 1 punnet blueberries
- Handful of mint
- 2 cucumbers
- 50g reduced fat feta
For the dressing:
- 60ml olive oil
- ½ lime
- 2 tsp rice malt syrup/ golden syrup or maple syrup
- Pinch of salt & pepper
Method
1. Slice the avocado, chop the mint cucumber and feta
2. To assemble the salad place rocket in the serving dish
3. Add all the chopped ingredients, almonds, and blueberries
4. For the dressing, mix olive oil, lime juice, rice malt syrup, salt and pepper into a small bowl or cup then drizzle over entire salad.
